Tasting Notes A true farm-to-bottle distillery, Daftmill is owned and operated by the Cuthbert family, guided by a deep respect for tradition, sustainability, and locality. Whisky is distilled only during the farm's quiet seasons, using estate-grown barley and spring water from the land. Nothing goes to waste--spent brewer's yeast comes from a nearby brewery, used mash feeds the cattle, and distillation byproducts are spread on the fields as fertiliser. This limited release is made from Optic barley harvested in the South fields. Of the twenty casks used, nineteen are first-fill ex-bourbon barrels, with one ex-PX sherry cask adding a subtle twist. The result is unmistakably Daftmill: tropical notes on the nose, a palate of barley sugar and malt, and a rich, dark fruit finish with a gentle sherry touch. A deep, complex, and lingering dram. Distilled in June July and August 2009. They were matured in the lower level of warehouse 2 before being bottled in December 2024 at the traditional Fife strength at 56.3% Product Details Country: Scotland Volume: 700ml
