Tasting Notes Clase Azul Anejo Tequila is a tribute to the Mazahuas the indigenous people inhabiting the north-western area of the State of Mexico and neighbouring Michoacan and Queretaro. Despite their proximity to Mexico City their culture is relatively unknown. So Clase Azul honours them with this decanter which features a four-petaled flower - the traditional Mazahua representation of the Sun - on the back. You'll also notice the raw clay at the base representing the fertile earth a thin blue line denoting the water that gives life to the agave the pina from which Tequila is made and the feathered design of the Clase Azul family in 24-carat gold paint.; The liquid inside begins with hand-selected Blue Weber agave that have matured for at least nine years. These are cooked with steam in stone ovens for 72 hours cooled and double fermented with a secret yeast known only to Clase Azul. It's then distilled in copper pot stills triple filtered and aged in small American oak barrels for 25 months. The Anejo Tequila that emerges from those precious casks is rich and full-bodied with mesmerising aromas and flavours of toasted oak agave syrup roasted almonds caramelised apple vintage marmalade praline dried herbs festive spices and gin botanicals. Silky and decadent it makes a fine match to sip alongside red meats robust sauces (particularly mole) mature cheese barbequed tropical fruit or bittersweet dark chocolate. Clase Azul is famed for its superior agave-based spirits and the sensational works of art they bottle them in. Each luxurious ceramic decanter is handmade by a community of Mexican artisans from the farmers of the organic agave to the enormous team of painters in the town of Santa Maria Canchesda.
